Sulphur-free sugarcane jaggery carrying a Detox Project glyphosate-free certificate, available as a solid block or as crushed granular. The sulphur-free claim is the substantive one. Commercial jaggery is very commonly treated with sulphur dioxide during boiling to lighten the colour, because pale golden jaggery sells better than the dark brown that untreated cane juice actually produces — and sulphites are a genuine trigger for sensitive people and asthma sufferers. Untreated jaggery is darker, softer and more variable batch to batch, which is the product being honest rather than inconsistent. Nutritionally, jaggery retains the molasses that refined sugar removes, so it carries trace iron and minerals that white sugar does not. That is a real difference but a modest one, and it should not be read as making jaggery a health food — it remains predominantly sucrose and the body treats it accordingly. The block form keeps longer; the granular is simply easier to measure and dissolve.
