Whole green moong, cleaned and left unpolished to keep its natural nutrition intact — no polishing agent, no colour, nothing rubbed onto the skins to fake a shine. Unpolished beans look a touch matte and uneven next to the glossy kind, which is exactly the point.

One of India's oldest cultivated legumes, it holds its shape in a dal or khichdi, and — being whole rather than split — is the form that will actually sprout.

Is It For You?

Good for

Everyday dal, khichdi and sprouting use

Those wanting a naturally gluten-free, plant-protein pulse

Avoid if

Anyone wanting a dal that cooks in ten minutes — whole moong needs soaking and time

Cooks who want a smooth yellow dal; the green skins stay visible and give a firmer, earthier result

Anyone who finds whole pulses hard to digest — the skins are the fibre and that is the trade-off

How to use
01

Soak 30 minutes to 2 hours for curries and khichdi

02

Soak overnight and grind for pesarattu, adai or chillas

03

Sprout for salads and snacking

What to look for in Whole Green Gram (Moong)?
01

Polished pulses are buffed with water, oil, talc or soapstone purely for shelf appeal. It strips the outer layer and can leave residue behind. Unpolished dal looks duller, and that is the point.

02

Uniform colour and high gloss are warning signs in dal, not quality markers.

03

Metanil yellow is a banned dye used to brighten yellow dals. Rub a few grains between wet palms: dye lifts onto skin and polish leaves a slick. Neither should happen.

04

Organic certification covers how it was farmed, not whether it was adulterated. They are two different tests.

05

Whole skin-on moong should sprout within a couple of days. If it will not, it has been over-processed or is simply old.
