What to look for in Brown Sugar?
Sulphur dioxide is used to bleach sugar bright white. Sulphurless sugar is a shade off-white, and that is the honest colour.
'Brown sugar' is usually refined white sugar with molasses added back. Genuinely unrefined sugar carries its molasses from the start.
The ingredient list should name one sugar. Anti-caking agents and added colour are both used in this category and both have to be declared.
Unrefined and alternative sugars are still sugar. A lower glycaemic index does not make them diabetic-safe.
