Semi Polished Rice (Rajmudi)

Rajmudi from certified organic farms, milled only partially so some of the bran layer stays on the grain. Rajmudi is a traditional Karnataka red rice, historically grown for the Mysore royal household, and it is a genuinely different eating experience from white rice — nuttier, firmer, with a pink-red fleck through the grain. Semi-polishing is the useful compromise it is usually sold at: keeping part of the bran retains a meaningful share of the fibre, B vitamins and minerals that full polishing strips away, while avoiding the long cooking time and dense chew of entirely unpolished brown rice. It takes longer to cook than white rice and wants a little more water. Native varieties like this one are also the ones most at risk of disappearing from cultivation, so buying them has a preservation argument alongside the nutritional one.
