Rava (Sooji)

Coarse-milled wheat semolina from certified organic wheat, unbleached and free of additives. Rava is the granular middle stage of wheat milling — coarser than atta, entirely different in behaviour from maida — and the texture is the whole point. It is what makes upma grainy rather than pasty and what gives rava dosa its lace-like crispness. Roast it dry in a pan before use and it stops clumping and turns nutty; skip that step and upma turns to porridge. Unbleached matters here for the same reason it matters with maida: commercial semolina is often whitened for shelf appeal, which does nothing for the food. This is a wheat product and contains gluten, so it is not suitable for anyone coeliac or gluten-sensitive. Also used for halwa, idli and rava ladoo.
