How to use
Dry-roast on a low flame until the skins loosen and crack, then rub them off in a cloth if a recipe wants them blanched
Boil in salted water for twenty to thirty minutes for soft, savoury groundnut
Roast then grind for chutney podi, or blend longer for peanut butter
Pound coarsely into curry bases, poha and chaat for texture
What to look for in Groundnut?
Aflatoxin from mould is the main safety risk in nuts and groundnuts. It is invisible, survives cooking, and is the reason to buy from brands that test.
Nuts and seeds go rancid because of their oil. Buy small sealed packs and store them cool and dark.
Raw means no added oil or salt. The ingredient list should be just the nut or the seed.
Broken, shrivelled or unevenly coloured pieces point to old stock or poor sorting.
