How to use
Soak roughly one part seed to six parts liquid for 15-20 minutes until a gel forms
Never swallow the seeds dry or with too little liquid — they absorb many times their weight and swell
Use one tablespoon soaked in three tablespoons water as an egg replacement in baking
Scatter dry over yoghurt or salad only where they will be eaten alongside plenty of liquid
What to look for in Chia Seeds?
Chia is close to single-ingredient everywhere, so the real questions are sourcing and microbial control rather than the ingredient list.
Whole seed keeps far better than pre-ground. Once the seed coat is broken the oil starts oxidising.
The omega-3 in chia is ALA, not the marine EPA and DHA in fish oil.
Seeds are high in oil and go rancid. Buy small sealed packs and store them cool and dark.
