Chana Masala

A ground spice blend built for chole, from certified organic whole spices, steam-sterilised and free of added colour, preservative or flavour enhancer. Chana masala blends are typically tarter and darker than a general-purpose garam masala, usually leaning on amchur or anardana for sourness and often on dried black tea or bay for the deep colour that a good chole carries. Used in far larger quantity than a finishing blend, so it goes in during cooking rather than at the end. The absence claim is the meaningful one here: commercial versions of this blend very often rely on MSG and artificial colour to deliver punch cheaply, and a version made from certified organic whole spices without either is working harder for the same effect.
