Beaten Rice (Poha)

Flattened rice from certified organic paddy, available in white and red varieties. Poha is made by parboiling paddy and then rolling it flat, a process that partially pre-cooks the grain and is why it rehydrates in a couple of minutes with nothing more than a rinse. The parboiling step also drives some of the bran's nutrients into the grain, which is why poha carries more iron than plain white rice — a genuine nutritional quirk rather than a marketing line. The red variety keeps more of the bran and correspondingly more fibre. Nutritionally this sits well as a breakfast: light, quick, low in fat, and easy to make substantial with peanuts, potato and curry leaves. Rinse briefly in a sieve rather than soaking, or it turns to paste. Certified organic sourcing matters here because rice is conventionally a heavily sprayed crop.
