What to look for in Ghee?
Ghee is among the most adulterated foods in India. Vegetable fat, dalda and sesame oil are all used, and none of them can be seen or tasted reliably.
Bilona or hand-churned ghee is made from cultured curd rather than straight from cream. The pack should say which method was used.
Real ghee grains differently with season and temperature. Identical texture year-round suggests a standardised blend.
A fatty-acid or adulteration test tells you more than an organic certificate. Organic covers farming, not purity.
