Bitter Honey, also sold as Jamun Honey, is a seasonal forest honey harvested by tribal communities of the Nilgiris during the summer months. It is a single ingredient: honey, nothing added.

It comes from the Aadhimalai co-operative, the same people who gather and sell it. Colour, thickness and crystallisation shift from batch to batch with what was flowering, which is wild honey behaving normally.

Honey is sugar. It is a less processed sweetener than white sugar, not a sugar-free one. No purity test for syrup adulteration is on file for this honey yet.

Why we picked it

  • A seasonal summer honey, and the only jamun honey in the range.
  • One ingredient, and the co-operative that gathers it is the one that sells it.
  • Colour and thickness shift with the season, which is what wild honey does rather than a fault.
  • The harvest income stays with the forest communities doing the collecting.
Buying guide

What to look for in Honey?

Sugar syrup adulteration is the central problem in honey. Rice and corn syrup are not detectable by taste, and the water-drop test does not work.
Moisture matters. Above roughly 20% honey ferments. Genuine low-moisture honey is thick and slow to pour.
Crystallisation is normal and varies by floral source. It is not a sign of sugar and not a sign of spoilage.
Raw, unfiltered honey keeps its pollen. Heavy filtering and heating make honey clear and pretty while stripping that away.
A C4 sugar isotope test is the check that catches syrup adulteration. An organic certificate covers the beekeeping, not the syrup.

Questions people ask

What is bitter honey?

It is a seasonal summer forest honey, also sold as jamun honey, harvested by tribal communities in the Nilgiris. One ingredient, nothing added. It is the only jamun honey in the range.

Why does my honey look different from the last jar?

Colour, thickness and crystallisation shift from batch to batch with what was flowering. That is wild honey behaving normally, not spoilage or added sugar.

Can I give it to my baby?

No. Honey should never be given to a child under 12 months. This is the standard advice for all honey, not specific to this brand.

Has it been tested for purity?

Not yet. No C4 sugar purity test for syrup adulteration is on file for this honey. If that result matters to you, it is worth knowing before you buy.

Is it sugar-free?

No. Honey is sugar. It is a less processed sweetener than white sugar, not a sugar-free one.
