Forest honey harvested by Irula, Kurumba and other tribal communities of the Nilgiris Biosphere, most of it taken from wild hives rather than managed apiary boxes — a genuinely different product from commercial honey, and the reason the colour, thickness and crystallisation shift from season to season depending on what was flowering. That variation is the honey behaving normally, not a defect. Sold plain as Wild Honey in three sizes, or infused with ginger, pepper, saffron, cinnamon, dates, fig or dry grapes. Bitter Honey comes from wild Jamun nectar gathered in summer, and Florea Honey from the small Apis florea bee in limited quantity. Note that Aadhimalai's own site calls the plain variety Sweet Honey. One caveat outweighs everything else here, and it is category-wide rather than brand-specific: honey is among the most adulterated foods in the world, routinely cut with sugar syrup. No C4-sugar or NMR purity test exists on file for any variant. That test is the priority before this goes live.
