Bilona-method cultured ghee from A2 Desi Gir cow milk, the bilona process is the substantive claim here and it is a slow one: milk is set into curd, the curd is hand-churned to butter, and the butter is simmered to ghee — as against the industrial route of separating cream from milk and clarifying that directly.

Culturing the milk first develops the aroma and produces a grainier ghee, and it takes considerably more milk and time to yield the same quantity, which is where the price comes from.

Why We Like It

  • Genuinely traditional bilona process, not just labelled that way.
  • Named cow breed (Gir) and milk type (A2), more specific than generic “pure ghee” marketing.
  • A lab report on file, which is the part that can actually be checked in a category built on the word pure.

What to look for in Ghee?
01

Ghee is among the most adulterated foods in India. Vegetable fat, dalda and sesame oil are all used, and none of them can be seen or tasted reliably.

02

Bilona or hand-churned ghee is made from cultured curd rather than straight from cream. The pack should say which method was used.

03

Real ghee grains differently with season and temperature. Identical texture year-round suggests a standardised blend.

04

A fatty-acid or adulteration test tells you more than an organic certificate. Organic covers farming, not purity.
