Raw Cashew Nuts

Whole, raw, and left exactly as they grew — no roasting, no salt, no oil sneaking in to mask the flavour. These come from native-variety trees rather than commercial high-yield stock, and buying cashews raw rather than roasted hands you control over the two things that usually compromise packaged nuts: the roasting fat and the salt load. Dry-roast them yourself and neither enters the equation. Nutritionally cashews are high in monounsaturated fat, magnesium, copper and plant protein, and they are more filling than their size suggests. One point of genuine curiosity: raw cashews sold anywhere have already been heat-treated, because the shell contains a caustic resin related to poison ivy and the nut cannot be extracted safely without it — raw here means unroasted, not untreated. Store cool; the fat content means they go rancid faster than harder nuts. We have not located a lab report or ingredient panel for this specific SKU, unlike Two Brothers' oil and atta range.
