The bilona process is the substantive claim here and it is a slow one: milk is set into curd, the curd is hand-churned to butter, and the butter is simmered to ghee — as against the industrial route of separating cream from milk and clarifying that directly. Culturing the milk first develops the aroma and produces a grainier ghee, and it takes considerably more milk and time to yield the same quantity, which is where the price comes from. On the A2 question, some honesty is warranted: A2 versus A1 beta-casein is a genuine genetic difference between cattle breeds, and Gir cattle are genuinely A2, but the claimed nutritional superiority over A1 milk remains contested in the research rather than settled. Buy it for the breed, the farming and the bilona process, which are all verifiable, rather than for the health claim, which is not.
