Whole white urad — black gram with the husk removed but the bean left whole — from certified organic farms, unpolished. This is the form that matters for South Indian batter work. Idli and dosa rise because whole skinned urad, soaked and ground wet, produces a batter that traps air and ferments reliably; split urad grinds to a thinner paste and gives a noticeably flatter result. If you make idli at home, this is the specific product to buy rather than the split version. Also used in vada and in medhu preparations for the same reason. Nutritionally strong on protein and iron, though skinning removes much of the fibre that whole black urad retains. Soak four to six hours before grinding, and grind with cold water to keep the batter from heating, since friction warmth will kill the wild fermentation before it starts.
