Kabuli Chana (White Chickpeas)

White chickpeas grown on Pure & Sure's certified organic farms and left unpolished, which matters more than it sounds. Polishing is the step where pulses get buffed with water, oil, talc or even soapstone to look glossier on shelf — cosmetic work that strips the outer layer and, in the worst cases, leaves residue behind. Skip it and you get a duller-looking chana that has kept its skin and its texture. Kabuli chana is the larger, paler chickpea used for chole, hummus and roasted snacking, as distinct from the smaller darker kala chana. Naturally high in protein, fibre and folate, and one of the more forgiving pulses to cook because it holds shape rather than collapsing. Soak overnight — genuinely overnight, not two hours — and it cooks far more evenly. Pure & Sure tests each harvest against 250+ pesticide residues through NABL and ISO 17025 accredited labs, which is a stronger traceability position than most organic brands in this category bother with.
