Fennel Seeds

Whole fennel seed from certified organic farms, steam-sterilised rather than chemically fumigated. Fennel is one of the spices where organic sourcing carries unusual weight, because a large share of what gets sold is eaten raw as a post-meal mouth freshener rather than cooked — there is no heat step between the field and you. That makes pesticide residue and the colouring practices common in the mukhwas trade more directly relevant than they would be for a spice destined for a hot pan. Naturally fennel is a soft sage green, not the vivid emerald of the coated stuff sold at restaurant counters, which gets there through added dye. Used whole in tempering, ground into panch phoron and spice blends, brewed as a tea for digestion, or simply chewed. Sweet, faintly anise-like, and warming. Dry-roasting for a minute before use lifts the aroma considerably, and buying it whole rather than ground keeps the volatile oils intact for far longer.
