Steam does the same job with heat and moisture, leaving no chemical residue. Buying cumin whole rather than ground is the other decision that matters, because ground cumin is a well-documented target for adulteration with everything from grass seed to sawdust, and whole seed is much harder to fake. Real cumin should smell sharp and warm when you crush a few seeds between your fingers. Dry-roast before grinding and the difference against pre-ground is not subtle.
