Whole black gram with the skin on, from certified organic farms and unpolished. This is the dal behind dal makhani, and there is no substitute for it — the black skin is what gives that dish its colour and its particular heaviness, and using skinned white urad instead produces something else entirely. It is a dense, slow-cooking pulse: soak overnight and expect a long simmer, because the texture only turns properly unctuous after extended cooking. That slowness is the point rather than a flaw. Nutritionally it is among the higher-protein pulses and unusually high in iron, with substantial fibre from the intact husk. Also used whole in South Indian preparations and, once soaked, in batters. Pair it with rajma or use it alone; either way, do not rush the simmer, and salt it only near the end so the skins soften properly.
