A protein bar from Mezmo built on sattu — roasted Bengal gram flour — rather than on whey isolate and glucose syrup. That is a genuinely interesting formulation choice. Sattu is a traditional Indian energy food with real protein and fibre content, and it has functioned as a working person's sustenance across Bihar and eastern UP for generations, which makes it a more coherent base for an energy bar than most imported protein blends. It also makes the product plant-based by construction rather than by substitution. The category context is worth knowing: most commercial protein bars derive a large share of their calories from sugar and rely on sugar alcohols, synthetic sweeteners and lengthy stabiliser lists to hold texture. Whether this one avoids that is precisely what we could not verify — the full ingredient list with proportions, and any binding or processing aids, were not available.
