Kombucha

Kombucha from Assamé, sold across six flavours: Ginger Lemongrass, Lychee Lemon, Elderflower Blueberry, Peach Lavender, Rose Hibiscus and Apple Cinnamon. Kombucha is fermented sweetened tea — a SCOBY culture consumes most of the sugar and produces organic acids, trace alcohol and the characteristic sourness, and a genuine one is live and refrigerated rather than pasteurised into shelf stability. That distinction is the single most useful thing to establish about any kombucha, because pasteurisation kills the cultures that are the entire point of drinking it, and plenty of shelf-stable products in this category are effectively flavoured vinegar soda. Residual sugar is the other variable that separates a well-made kombucha from a soft drink with a health halo.
