Aadhimalai is a producer company owned by roughly 1,700 indigenous farmer-shareholders across the Nilgiris Biosphere Reserve — the people growing this crop are the people who own the business, which is a materially different supply chain from a brand buying seed on the open mandi market. Mustard here is one of several small-volume spice crops grown alongside forest produce rather than as a monoculture cash crop. Single ingredient, nothing blended, no anti-caking agent, no polish.
