A monofloral wild honey harvested during the Jamun flowering season from the forest combs of Apis Dorsata — the Giant Rock Bee of the Nilgiris Biosphere Reserve. Single ingredient. Raw, unprocessed, unheated. Harvested by Irula and Kurumba tribal communities using traditional methods. No antibiotics (wild bee — impossible). Distinctly less sweet than commercial honey with a characteristic Jamun bitter-tart note. Natural crystallization expected — a sign of authenticity. Yellow pollen particles on the surface are nutritious — eat them.
