Whole black pepper grown and harvested by indigenous Irula and Kurumba farmer-shareholders of the Nilgiris Biosphere Reserve, using an agroforestry model where pepper vines climb existing forest trees rather than being farmed as cleared monoculture. Aadhimalai is a 1,700-member tribal-owned producer company, not a conventional packaged-goods brand buying from traders — the growers hold the equity. Their producers are organic-certified through a Participatory Guarantee System (PGS), a peer-verification model recognised under India's organic framework and used widely by smallholder groups for whom third-party certification is prohibitively expensive. It is a real certification, just structurally different from NPOP or USDA third-party audit, and worth understanding rather than treating as equivalent. Single ingredient, no polish or oil coating. Pepper this fresh should smell sharp and almost citrusy when crushed rather than merely dusty-hot. Grind it fresh.
